My Cooking Logs2006 BBQ Logs:My First Cook - My first cooking session with the Weber Smokey Mountain Smoker/Cooker. I cooked three chickens and some baked apple desserts. Two chickens were done by the Smoke & Spice recipe, the other butterflied and marinated in Italian Dressing.Family Fourth - I had invited my side of the family (my parents, my brothers, my brother's families) over for ribs on the fourth, then after ordering the ribs I ordered a smoker. So I went ahead and used the smoker and cooked four chickens and two racks of ribs on the smoker. First Butts - I had planned to do eight chickens, but the local store was out of whole fryers. As they had a nice cryovac package of two bone-in butts totaling 16 pounds, I got that. While in the store, I had mis-remembered how long butts took. Eighteen hours of cooking time later . . . . Eight 7-hour Chickens - Did the eight chickens I had intended to do on butt-day. Eight chickens must have been a larger mass of cold meat than I was anticipating, as it went from a four hour cooking time to a seven hour cooking time. Fast Butts, Faster Chicken - We had run out of pulled pork in the freezer and were low on chicken, but it was going to be a busy weekend. I went ahead and cooked, though I used a fast method for the butts -- and chickens -- as aimed the smoker at 300 degrees lid temperature. I figure BBQ not as good as my best is still better than a lot of other food you can eat. Overnight Butt Cookin' - The last time I did butts, or at least the slower version, I started very early and finished very late. I decided then that the next time would be an overnighter. So, here's the overnighter. A Plethora of Meatloaves - I've been wanting to do a meatloaf recipe every since I read about smoking a meatloaf on the Virtual Weber Bullet site. Me being me, of course, it ended up as six meatloaves. |
